Italian Herb Crusted Pork Loin (Video Included) #WhatsCookingWednesday

Time to change up my cooking this week thanks to Shopease Foods and a freezer full of meat. We pulled out a Pork Loin Roast to cook up this week with some carrots and potatoes. It has started to get cooler here so I wanted a good hearty meal to serve up to everyone. 



3 TBSP Olive Oil
3 Garlic Close, minced
1 tsp Basil
1 tsp Thyme
1 tsp Rosemary
1 tsp Salt
1/2 tsp Italian Seasoning
1/2 tsp Pepper
1 Boneless Pork Loin Roast (about 3lbs)
8 medium Carrots, halved lengthwise
2 medium Onions, quartered


In a small bowl mix oil, garlic, basil, thyme, rosemary, salt, pepper and italian seasoning; rub over roast. 


Arrange carrots and onions on the bottom of a 13x9 baking pan. Place roast over vegetables and refrigerate covered for about one hour. 

Preheat oven to 475*. Roast pork loin for 20 minutes

Reduce oven to 425* and cook for another 40 minutes longer. 

Remove roast from oven; tent with foil. Let stand 20 minutes before slicing.
