One of our favourite meats to cook in this house is chicken. There is nothing better than a moist chicken cooked to perfection. Once we cleaned out our freezer we found a chicken that needed to be roasted. 

This is pretty much the end of our last Shopease Foods meat order from November 2015. This week we will be receiving our next order to fill up our freezer for the next few months. I can't wait to have a few more meat options to choose from. 

Instant Pot Roast Chicken
  • 1 whole - 4lb. organic chicken
  • 1 Tbsp. Coconut Oil
  • 1 tsp. paprika
  • 2 cups Chicken Broth
  • 1 tsp. dried thyme
  • 1/2 tsp. freshly ground black pepper
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 3 cloves garlic, peeled

  1. 1. In a small bowl, combine paprika, thyme, salt, and pepper. Rub seasoning over outside of chicken.
  2. 2. Heat oil in the pressure cooker to shimmering. Add chicken, breast side down and cook 8 minutes.
  3. 3. Flip the chicken and add broth, lemon juice and garlic cloves.
  4. 4. Lock pressure cooker lid and set for 30 minutes on high.
  5. 5. Let the pressure cooker release naturally.
  6. 6. Remove from pressure cooker and let stand for 5 minutes before carving.
