I have had my Vitamix for almost 4 years now. We got it because our daughter was really sick with Crohn's disease and the blender allowed the nutrients to be absorbed by her body a litte easier. Even though the main purchase was made to help our daughter I loved all the things I could make with my vitamix. I was happy to receive this recipe book to cruise through and see what other things I could make with my vitamix.
If you are not familiar with the Vitamix it is a very powerful blender and you can make ice cream, soups, smoothies and so much more with it. As I was going through this new recipe book I have become inspired to make my own Almond Milk fresh when I need it. Making almond is so easy to do and I know what is in it, that is very important to me.
The Vitamix has made it easy for me to continue to eat whole foods in a convenient and quick way. I can just throw it into my vitamix and make delicious sauces, soups and smoothies. For parents out there trying to get more fruit and vegetables into your kids the Vitamix makes it really easy to do that.

Spanish Salsa Verde
This fresh green sauce is perfect over fish or chicken, tossed with rice or pasta or even as a topping for eggs. There are just a few anchovies in the mix adding a salty richness.
1/2 cup Extra Virgin Olive Oil
1/4 cup Red or White Wine Vinegar
4 Large Anchovies, drained
2 cloves Garlic,peeled
2 cups Fresh Basil Leaves, lightly packed
2 cups Fresh Parsley Leaves, lightly packed
1 cup Fresh Mint Leaves, lightly packed
2 TBSP Capers, drained
1/2 tsp Salt
2 TBSP Capers, drained
1/2 tsp Salt
1. Place all the ingredients into the vitamix in order given. Secure lid, remove lid plug and insert the tamper. With the switch on variable, select speed 1 and turn the machine on. Gradually increase the speed to 10, then switch the switch to High. Using the tamper to press the ingredients into the blades, puree for 30 to 40 seconds or until smooth.
2. Transfer to a bowl and use immediately or store in an air tight container in the fridge for up to 2 days.
Makes 1 1/4 cups
