Easy Crustless Chicken Pot Pie (Video Included) #WhatsCookingWednesday
I love the versatility of a Rostisserie Chicken. I usually pick one up on my errand day while at Costco. I can get about three meals out of one chicken and my family loves this Chicken Pot Pie recipe and I like it because it is so easy to make. I have made this in the instant pot also by changing a few things up and I will have to post that for you to enjoy.
Crustless Chicken Pot Pie
1 1/2 cups Chicken, diced
2 cups Vegetables (I used mixed)
1 can Cream of Chicken Soup
2 Cups Potatoes, Mashed
Preheat oven to 350 degrees.
In a large bowl mix together chicken, vegetables and soup.
Layer mixture into a greased 8x8 pan and then top with mashed potatoes.
Cook for about 45 minutes until heated through.
I used frozen vegetables so I had to cook mine for the full 45 minutes to ensure that they would be cooked.
This is great to serve with a salad.
