I am always looking for ways to feed my family quick and inexpensive meals when my husband comes home from work he likes to eat right away. Being able to make this salad ahead of time makes it quick to serve once he gets in the door. 

I love how it is a one pot meal if you will even though it is a salad. It has everything in it to constitute a meal in our house and yet it doesn't heat up my house to make. Perfect for serving in the summer to your family or a potluck because this salad does travel well. 






Ingredients 

2 Cups Spring Salad Mix
1 Large Tomato, chopped
2 Cups Corn, cooked
2 Chicken Breasts, diced
2 Cups Lettuce
2 Cups Cheese, shredded
2 Cups Tortillas, crushed

Salad Dressing

1/2 Cup Salsa
1/2 Cup Catalina Dressing

1. In a large glass bowl combine the ingredients in the order listed above. 
2. Mix up Salad Dressing and then you can pour it over the salad once you are ready to eat it if you are at a potluck or have a gathering but I recommend setting it to the side so you can just put it on the salad once you dish it on your plate. That way if you have leftovers you can save them for the next day.
