Chicken Thighs on Rice (Video Included) #WhatsCookingWednesday

The best thing about this recipe is the fact that it can be altered to your families tastes. I love recipes that I can change up so that they do not taste the same every time I make them. I have added all my vegetables to this dish to make it a one-dish meal that makes for an easier cleanup.



CHICKEN THIGHS ON RICE

2 cubes chicken bouillon & 1 tablespoon water*
2 cups water*
1 cup uncooked white rice
1/4 cup butter
1 onion, chopped
2 cloves garlic
4-6 chicken thighs (I used boneless/skinless)
1 teaspoon Italian-style seasoning
1 cup frozen peas


  • Preheat oven to 350 degrees F (175 degrees C). 
  • Dissolve bouillon in 1 tablespoon water. In a medium bowl combine the rice, butter/margarine, onion, garlic, peas and 2 cups water. Mix well and pour mixture into a 9x13 inch baking dish. 
  • Place thighs on top of rice mixture and season to taste. Cover with tinfoil to keep chicken moist. Bake in the preheated oven for 55 minutes (depends on the size of the thighs).

Remember to adjust your liquid to your ratio of rice that you need to use for your family. 

*I have taken out the bouillon and replaced it with Chicken Broth that I had on hand with the same results.
